To finish off the feast, we’ve got this decadent yet surprisingly light Chocolate Avocado Mousse recipe. It's creamy, chocolatey, and completely guilt-free. The avocados make it super smooth, and the raspberries give that perfect little tang to cut through the richness.

Ingredients:
2 ripe avocados
4 tbsp cocoa powder (unsweetened)
3 tbsp maple syrup (adjust to taste)
1 tsp vanilla extract
100ml almond milk (or any plant-based milk)
100g fresh raspberries (for garnish)
A pinch of salt
Recipe:
Cut the avocados in half, remove the pits, and scoop the flesh into a blender or food processor.
Add the cocoa powder, maple syrup, vanilla extract, almond milk, and a pinch of salt. Blend until smooth and creamy.
Taste and adjust the sweetness, adding more maple syrup if needed. If the mousse is too thick, add a little more almond milk to reach the desired consistency.
Spoon the mousse into small serving bowls and chill in the fridge for at least 1 hour before serving.
Just before serving, garnish with a handful of fresh raspberries on top.

Make Ahead: This mousse is ideal to make ahead of time. You can prepare it the day before and just let it chill in the fridge until ready to serve.

Garnish Options: If raspberries aren’t available, you can easily swap them for strawberries, pomegranate seeds, or even a sprinkle of crushed pistachios for a bit of crunch.

A lightly sweet Prosecco with fruity and floral notes balances the richness of the chocolate mousse and complements the fresh raspberries. Its bubbles provide a nice contrast to the creamy texture of the dessert.
