Chocolate Avocado Mousse with Raspberries Recipe

To finish off the feast, we’ve got this decadent yet surprisingly light Chocolate Avocado Mousse recipe. It's creamy, chocolatey, and completely guilt-free. The avocados make it super smooth, and the raspberries give that perfect little tang to cut through the richness.

Ingredients:

  • 2 ripe avocados

  • 4 tbsp cocoa powder (unsweetened)

  • 3 tbsp maple syrup (adjust to taste)

  • 1 tsp vanilla extract

  • 100ml almond milk (or any plant-based milk)

  • 100g fresh raspberries (for garnish)

  • A pinch of salt



Recipe:

  1. Cut the avocados in half, remove the pits, and scoop the flesh into a blender or food processor.

  2. Add the cocoa powder, maple syrup, vanilla extract, almond milk, and a pinch of salt. Blend until smooth and creamy.

  3. Taste and adjust the sweetness, adding more maple syrup if needed. If the mousse is too thick, add a little more almond milk to reach the desired consistency.

  4. Spoon the mousse into small serving bowls and chill in the fridge for at least 1 hour before serving.

  5. Just before serving, garnish with a handful of fresh raspberries on top.

Three Tips for the Dessert:

  1. Make Ahead: This mousse is ideal to make ahead of time. You can prepare it the day before and just let it chill in the fridge until ready to serve.

  2. Flavor Variations: If you want to switch things up, you can add a pinch of cinnamon or a dash of espresso powder for a deeper, more complex flavor.

  3. Garnish Options: If raspberries aren’t available, you can easily swap them for strawberries, pomegranate seeds, or even a sprinkle of crushed pistachios for a bit of crunch.


Wine Pairing: Prosecco Extra Dry

A lightly sweet Prosecco with fruity and floral notes balances the richness of the chocolate mousse and complements the fresh raspberries. Its bubbles provide a nice contrast to the creamy texture of the dessert.
