Even though this is a somewhat lengthy process, this homemade limoncello is worth it ten times over. Its cheaper, you know the ingredients and you get to gloat about being able to make limoncello. Fantastic in summer, so start the process of making it in spring so you are able to reap the rewards when the sun is blasting and you're in need of a cold (alcoholic) drink.
INGREDIENTS
10 lemons
1 liter vodka (no bitter one as it will ruin the taste a little, talking from experience)
750 grams of sugar (white)
1 liter water
METHOD
1. Zest the lemons, and place zest into a large glass bottle or jar. The zesting might be a bit of a pain in the ass but it beats pre-zested lemons. You won't need the actual lemon fruit for this recipe so as to not let them go to waste, use them in another recipe or make pure lemon juice. Pour in the vodka. Cover loosely and let infuse for one week at room temperature.
2. After one week, combine sugar and water in a medium saucepan. Bring to a boil but do not stir. Boil for 15 minutes and then allow the syrup to cool to room temperature.
3. Stir the vodka mixture into the syrup. Strain into glass bottles, and seal each bottle with a cork. Let the mixture sit for 2 weeks at room temperature.
4. Place the bottled liqueur into the freezer. When icy cold, serve in vodka glasses or shot glasses.
