Ingredients:
100g smoked salmon
8-12 small blinis (store-bought or homemade, click here for the recipe)
100g crème fraîche
1 tbsp fresh dill, finely chopped
1 tsp lemon zest
1 tsp lemon juice
Freshly ground black pepper
1 tbsp olive oil (for heating the blinis)
Recipe:
In a small bowl, mix the crème fraîche with the lemon zest, lemon juice, and chopped dill. Season with a bit of black pepper and set aside.
Heat a skillet over medium heat with a little olive oil. Lightly toast the blinis for about 1 minute per side until warmed through and slightly crisp.
Top each blini with a small piece of smoked salmon and a dollop of the lemon-dill crème fraîche mixture.
Garnish with a bit of extra dill or lemon zest if you like, and serve immediately.
