Vegan Shrimp recipe

Ingredients

  • 1 can of hearts of palm, drained and rinsed

  • 1/2 cup of all-purpose flour

  • 1/2 teaspoon of paprika

  • 1/4 teaspoon of garlic powder

  • 1/4 teaspoon of salt

  • 1/4 teaspoon of black pepper

  • 1/4 cup of unsweetened almond milk

  • 1 cup of panko breadcrumbs

  • 1 tablespoon of olive oil

  • Lemon wedges for serving


Method

  1. Preheat your oven to 400°F (204°C). Line a baking sheet with parchment paper.

  2. Cut the hearts of palm into small pieces, around 1 inch in length.

  3. In a shallow bowl, mix together the flour, paprika, garlic powder, salt, and pepper.

  4. In another shallow bowl, pour the almond milk.

  5. In a third shallow bowl, place the panko breadcrumbs.

  6. Dip each piece of hearts of palm into the flour mixture, then the almond milk, and finally the panko breadcrumbs.

  7. Place the coated hearts of palm onto the prepared baking sheet.

  8. Drizzle the olive oil over the coated hearts of palm.

  9. Bake in the preheated oven for 15 to 20 minutes, or until the breadcrumbs are crispy and golden brown.

  10. Serve the vegan shrimp with lemon wedges for squeezing. Enjoy!
