Vegetarian burritos

These burritos are too good not to share. Even if you're not vegan and don't wish to be anytime soon, this recipe will blow your mind. It might even make you consider going vegan, the vegan minced meat is that great in this recipe. Make this in advance or to eat right away, this burrito recipe is great for any time and any place.


DINNER - 4 servings

INGREDIENTS

- 12-16 Tortilla wraps

- 4 big tomatoes

- 200 gr Iceberg lettuce

- 200 gr corn

- 200 gr Black beans

- 4 Avocados

- Grated vegan cheese

- (Vegan) sour cream

- Bunch of coriander

- Tortilla chips

- Vegetarian minced meat

- Around 30 grams of concentrated tomato puree


1. Chop the red onion and crush the garlic clove. Dissolve the tomato paste in 150 ml water.

2. Heat a frying pan and add the olive oil, saute the onion and garlic in it and then add the minced meat. Season with the tomato paste-water mixture.

3. Remove the seeds from the tomatoes and cut them into cubes.

4. Drain the corn and beans and cut the iceberg lettuce.

5. Mash the avocados and season with some salt and pepper.

6. Place the avocado, tomatoes, corn, beans, iceberg lettuce and the vegetarian mincemeat in bowls.

7. Heat the tortillas in a frying pan or microwave and serve together with the grated cheese, sour cream and tortilla chips. Everyone can make the tortilla the way they like it this way.
