Ingredients

  • 4 large flour tortillas

  • 1 cup lettuce, shredded

  • 1 cucumber, sliced thinly

  • 1 small red onion, thinly sliced

  • 1 avocado, sliced

Cocktail Sauce:

  • 1/2 cup vegan mayonnaise

  • 2 tablespoons ketchup

  • 1 tablespoon horseradish

  • Juice of 1 lemon

  • Salt and pepper to taste


Instructions

Make Vegetarian Shrimp:

  • Prepare Shrimp Mixture:

    • In a bowl, mix the konjac powder, tapioca starch, and paprika. Gradually add water to form a thick paste.

  • Shape the Shrimp:

    • Grease your hands with vegetable oil and shape the mixture into small shrimp-sized pieces.

  • Cook the Shrimp:

    • Bring water in a large pot to a boil. Carefully drop the shaped shrimp into the boiling water and cook for about 3-5 minutes or until they float to the surface and have a firm texture.

  • Cool the Shrimp:

    • Remove the shrimp from the water and let them cool on a plate.


Prepare Cocktail Sauce:

  • In a small bowl, mix vegan mayonnaise, ketchup, horseradish, and lemon juice. Season with salt and pepper.


Assemble the Wrap:

  • Lay out the tortillas. Spread each with a layer of cocktail sauce.

  • Top with lettuce, cucumber, red onion, avocado, and vegetarian shrimp.

  • Roll up the tortillas tightly, cut in half, and serve.
